This is perhaps my favorite wine we make, which is somewhat ironic considering we don’t really make it, but just benignly neglect it. Over the years we have often taken a perverse satisfaction in eschewing academic advice when it comes to winemaking. That tendency is no more apparent or rewarded than in the crafting of our Tawny Port.
